Observation: Dishwasher not reaching rinse temperature of 82C as per data plate on dishwasher.
Corrective Action(s): Repair dishwasher so that it is able to reach 82C at the final rinse cycle. Ensure that gauges are properly calibrated. Until it is repaired, add sanitizer to the machine as per manufacturer's instructions.

- sanitizer measured 200ppm quats at the dispenser; ensure that solution in spray bottles is changed out regularly
- no expired foods upon random audit
- ice machine sanitary; scoop stored separately
- dried foods stored in a sanitary matter; scoops stored separately
- general sanitation is satisfactory
- no sign of pests at the time of inspection
