Observation (CORRECTED DURING INSPECTION): 5 bags of prepackaged, cooked grounded beef and marinated chicken observed to be stored inside the prep sink. Temperature measured at 17C. Staff stated they were taken out of the walk-in cooler almost 2 hours ago.
Corrective Action(s): Move all the aforementioned packages of meats into the walk-in cooler. Do not leave any proteins at room temperature.

Observation (CORRECTED DURING INSPECTION): Various food tray covers stored inside inserts were not maintained in sanitary condition. Unsanitary liquid observed at the bottom of the inserts.
Corrective Action(s): Clean and sanitize the tray covers immediately. Educate staff to properly air dry all the utensils and food equipment before storing them.

Observation (CORRECTED DURING INSPECTION): Food sanitizing spray bottle measured with 0 ppm of quaternary ammonium sanitizer. 200 ppm measured from sanitizer dispenser.
Corrective Action(s): Discard and refill the spray bottle with 200 ppm quaternary ammonium sanitizer. Ensure solution is changed on a daily basis as quaternary ammonium concentration decreases over time.
