Observation (CORRECTED DURING INSPECTION): Sandwich prep cooler:
(top) Internal temperaturs of food 6C to 8C (dehli, cheese, mayo, chopped carrots)
(bottom) interneal temperatures of foods at 4C to 5C (dehli)
Corrective Action(s): Operator moved food from top to bottom cooler at time of inspection.

Observation: Rodent droppings noted underneath the metal tray rack.
Corrective Action(s): Remove the rodent droppings. Clean and sanitize the area with bleach and allow to air dry. Implement a proper control and monitoring of pest activity (eg. use catch stations).

Observation: The following areas requires cleaning and sanitizing:
-cabninet shelves, door and handles (front)
-all shelves (back)
-the countertop oven door, handle. The bottom part below the door had grease build-up.
-The wall near the meat slicer
-The wall above the dishwashing station.
Corrective Action(s): Clean the areas mentioned above.

Observation: -The shelving unit in walk-in cooler appeared worn out. Surface was no smooth or easy to clean.
-Wall behind the chest freezer in the front behind the sandwich prep station had holes.
Corrective Action(s): -Repaint the shelving unit mentioned.
-Repair the wall so that surface is smooth, impervious to moisture and easy to clean.

-Food in sandwich prep cooler (bottom) at = or <4C (See comments regarding food in inserts above cooler).

Note: 1 chest freezer and 1 cooler not functioning and not in use.
