Observation: Biofilm build up observed in the top compartment of ice machine.
Corrective action: discard the ice, thoroughly wash/rinse/sanitize (using either QUAT @ 200ppm or Chlorine @ 100ppm) and let air dry. Ensure the top component is routinely cleaned.

Observation (CORRECTED DURING INSPECTION): Cleaning rags observed on food prep surfaces (not stored in a sanitizer solution). The moist rag in addition to collected food debris can promote microbial growth.
Corrective action: Store all cleaning rags not in immediate use in a sanitizer solution (Chlorine @ 100ppm --> 1/2 cap of bleach per L of water) and replace solution at most every 2 hours.

Corrective action: Deep clean entire premises and above noted areas. Ensure cleaning of hard to reach areas is done routinely.

No back flow preventor observed.
Due to the potential of water lowing back into the municipal potable water line, this practice must stop until the part is installed.
