Observation: Food equipment not being washed and disinfected after use. Wiping cloths not being properly stored. Too many cloths noted.
Correction: ALL food contact surfaces must be washed and disinfected after use! All items are required to be stored in a sanitary manner to prevent post contamination. ie: Upper shelves. Wiping cloths must be stored in a sanitizer at all times. (ie: Bleach)

Reinspection based on previous inspection report.
- Food Storage: All food/ingredients are required to be stored in covered, food grade containers at all times!
- Mechanical Dishwashing: All food contact surfaces are required to be cleaned and sanitized after use! These items are required to be stored in a sanitary manner in order to prevent post contamination.
- Structurally: Ongoing. Continue efforts to keep all work stations/surfaces in good repair. (ie: smooth, tight and impervious to moisture)
- Sanitation: Increased cleaning is required. Daily/weekly and monthly schedules are required to be followed. All items are to be stored off of floors. Increased sanitation is part of an effective rodent control program.
- Pest Control: A Certified Pest Control program is required to be maintained within this facility. Service provider recommendations are required to be followed. (ie: Repair exterior door - gap noted, seal all holes/gaps in walls and ceiling tiles, Sanitation is required to be improved.)

All prep lines/work areas are to be kept free of miscellaneous items! Store all items in designated areas - any unwanted items are to be removed from facility to free up space and reduce harborages.
