Routine inspection is conducted and following are observed:
- Handwashing station in BBQ area is supplied with hot and cold running water, liquid soap and paper towel
- Walk-in cooler (in back area) measured at less than 4C
- Walk-in freezer (in back area) less than -18C
- Sanitizer at two compartment in in back area is 200ppm quats.
- In BBQ, food contact surface sanitizer is available in bucket and concentration is measured at 200ppm chlorine solution
- Hot holding unit for cooked meats (steam tables) is at greater than 60C. BBQ ducks on top hanging hooks is measured in the range 38-40C, operator mentioned that product is stored for maximum four hours. NOTE: It was discussed with operator to maintained time tracking sheet, the time when BBQ ducks are stored in display cabinet temperature must be recorded on time and temp log sheet. BBQ duck must be stored for maximum of two hours and must be discarded after that.
- NO evidence of pest activity is noted at the time of inspection
- FOODSAFE level 1 verified, expiry Nov 6, 2023
- General sanitation is satisfactory
