Routine inspection of Waterford servery kitchen on Care floor.
Food served in Care facility is made in the main kitchen and is brought up hot or cold to the care side servery and residents can eat in dining room. No food is processed at this kitchen location.
- Cooler temperature is above 4 C but food temperature is 4 C/40 F or colder - ok (inspection occurred during lunch service).
- Thermometer for cooler - see above. Keep accurate temperature records as part of your food safety plan.
- Freezer temperature - ok.
- Hot holding food - soup temperature satisfactory.
- Manager in charge has Food Safe certification.
- Hand washing sink has hot/cold water, liquid soap and paper towels.
- Sanitizer - reviewed procedures.
- Dishwashing - all cups, plates, and utensils are washed and sanitized in main floor kitchen dishwasher (100ppm chlorine sanitizing rinse detected today).
- General cleaning is ok - improve cleaning of ice machine (hard to clean area) to your sanitation plan/cleaning schedule as discussed.
- Licensed pest control contract in place.
Inspection carried out with Manager, Culinary Services. Signature not required. Copy of report to be emailed.
