Observation (CORRECTED DURING INSPECTION): The concentration of QUATS sanitizer inside spray bottle at the front of house is 50 ppm. Sanitizer concentration is insufficient to remove bacteria from food contact surfaces.
Corrective Action(s): Ensure the concentration of QUATS sanitizer inside spray bottles is 200 ppm at all times. Operator replaced that sanitizer inside spray bottle with 200 ppm QUATS sanitizer from the dispenser.

Comments

Routine inspection conducted. The following observations were noted:

Administrative
- Permit to operate is posted in a conspicuous location
- Operator and staff on duty have FOODSAFE Level 1

Handwash stations and employee hygiene
- All handwash stations are unobstructed
- All handwash stations are supplied with hot and cold running water, liquid soap, and paper towels
- Employees demonstrated excellent personal hygiene practices.
- Employees wash their hands frequently

Temperatures of coolers, freezers, and hot holding units
- All coolers are 4C and below
- Walk-in freezer is -14C
- Hot holding unit (meatballs) is over 60C. No soups in hot holding unit at the time of inspection

*Ensure the lids of the prep cooler are closed while the facility is not busy making sandwiches for customers. This ensures food is maintained at 4C and below.

Sanitation
- Concentration of QUATS sanitizing solution from the sanitizer dispenser by the 3 comp sink is 200 ppm
- No signs of pest activity at the time of inspection
- All equipment is made of food grade material and kept and good working order
- General sanitation of the facility is satisfactory

*Friendly reminder that all utensils are to be air dried after they are sanitized

Storage
- Cleaning agents are clearly labelled and stored separately
- Food products are stored at least 6 inches off the ground
- Dry storage room is organized

Additional comments
- Floors are smooth, non-absorbent and easy to clean
- Light bulbs are protected by a shatterproof cover
- Thermometers are in good working order
- Thermometers are present inside every cooler and freezer
- Washrooms available for customers have hot and cold running water, liquid soap, and paper towels
