Observation (CORRECTED DURING INSPECTION): Some mold observed inside of ice machine.
Corrective Action(s): All ice disposed. Staff sanitized unit with 100 ppm bleach solution (1 tsp bleach: 1 L water).

Observation (CORRECTED DURING INSPECTION): High temperature dishwasher rinse cycles are fluctuating between 68 C - 76 C.
Corrective Action(s): Follow manual warewashing for time being (100 - 200 ppm chlorine solution required). Okay to use dishwasher for washing and rinsing. Contact service technician for repair (1 day). Rinse cycle temperatures should be consistently > = 71 plate level, minimum 82 C gauge. Dishwasher mostly for in house use and large events. Rental groups are not permited to use dishwasher.
