Observation (CORRECTED DURING INSPECTION): Garlic herb butter in a container observed sitting at room temperature in dry storage area next to walk-in cooler. Staff mentioned that the garlic butter was removed <2 hours ago from the cooler to allow to soften prior to use. Staff placed the garlic butter back into the cooler (at 4C) during time of inspection.
Corrective Action(s): Garlic butter is a potentially hazardous food which must be stored at 4C or lower and/or at 60C or higher to prevent microbiral growth and/or toxin production.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): QUATS sanitizer pails (x2) measured at 50 ppm QUATS concentration with test strip during time of inspection. Staff prepared fresh sanitizer solution during time of inspection which measured at 200 ppm.
Corrective Action(s): Ensure QUATS sanitizer pails are changed more frequently (as per sanitation plan) to maintain adequate strength of 200 ppm QUATS concentration for effectively removing potential pathogens from food contact surfaces.

Observation: Fruit flies observed in kitchen and bar area. Operator mentioned that pest control company conducts inspections monthly and they are aware of the fruit flies. Pest reports available on premises and verified during time of inspection. UV light/fly trap installed by Ecolab and filters are changed monthly.
Corrective Action(s): Operator to send a copy of the next 2 pest reports to the health inspector to verify fruit fly problem is being treated.

Observations:

1. Temperatures
- Walk-in cooler #1 at 4C
- Walk-in cooler #2 (beverage cooler) at 3C
- Walk-in freezer at-18C
- Undercounter cooler drawers in cooking line at 4C or lower
- Sandwich cooler inserts in cooking line at 4C or lower
- Undercounter bar cooler measured at 3C
- Thermometers available in cold holding units

2. Sanitation:
- General sanitation satisfactory during time of inspection
- Hand washing stations in kitchen, bar, service area, staff washrooms, prep area supplied with liquid soap, paper towel, hot and cold running water
- Chemical dishwasher measured at 100 ppm chlorine residual at plate surface
- Glass washer measured at >12.5ppm iodine
- Ventilation hood kept in good sanitary condition - operator mentioned that it is deep cleaned along with around and behind cooking units every 2 weeks
- QUATS sanitizer spray bottles (x2) measured at 200 ppm QUATS concentration with test strip
- Ice machine kept in sanitary condition with scoop placed outside the machine
- Re-used utensils observed submerged in ice - good!

3. Storage:
- All food observed covered and at least 6 inches off the floor
- Dry storage area well-kept and sanitary

4. Pests:
- Pest control company contracted to conduct inspection every month. Reports verified during time of inspection

5. Administration:
- Operating permit visible during time of inspection
- FOODSAFE Level 1 trained staff on premises during time of inspection
