Follow up inspection: The dishwasher's thermostat was adjusted during the inspection and it measured > 71 C ( 75 C) at the plate level. Time tracking is being done for the bacon and cheese croissants. Doors are on order for both entrances and will be flush with the floor. The ventilation hole in the wall is currently covered with cardboard and tape. A metal cover is on order for this area. No new droppings were found.
