Observation (CORRECTED DURING INSPECTION): Eggs in walkin cooler were stored on top shelve above ready to eat items

Corrective Action: Eggs were moved to a lower shelf below ready to eat itmes at time of inspection.
Eggs and raw meat must be stored below cooked and ready to eat items.

Observation (CORRECTED DURING INSPECTION): Cardboard on top of chest freezer that was used as a food storage area and cardboard on dry storage shelving

Corrective Action: Cardboard was removed from top of freezer at time of inspection. Remove cardboard from dry storage area
Cardboard can not be washed and sanitized properly and must not be used as a contact surface.

Handwashing stations had hot / cold running water, liquid soap, single use paper towels.
Fridges measured a 4C or below and freezers measured at -18C
Hot holding of rice measured at 63C
Chlorine sanitizer in spray bottle was labelled and measured at 100ppm
High temperature dishwasher measured at 71.7C
Thermometers were available in coolers and probe thermometer for meat
No pests at time of inspection
Hood ventilation cleaning is scheduled for this month.
Operator explained two step cooking process of donair meats
Permit was posted and Foodsafe training is valid
