Observation: Noted tempura at temp of 45 oC , stock at room temperature.
Correction: All hot foods must be kept at temp of >60 oC or hotter at all time
Comments

- Good improvement noted, weekly contract with pest control is in place. Closure order is lifted subject to addressing the outstanding issues:

* Lighting must be improved in the back- operator is in process of installing more lighting
*Cups and plates on in kitchen cooking line to be protected- operator is planning to install cabinet ( with sliding door)
*Back door screen- not acceptable, screen door must be flashed to floor with no gaps.
* More rodent catch all traps and sticky traps are required ( mechanical room, under shelving, under sinks)
* hanging leaking pipes to be fixed

Send an email with pictures re: the above * outstanding items to the attention of the area inspector no later then Aug 21-2023.

Progressive report re: rodent activity is requried every month.
