- Temperature Control: Monitoring audits reviewed. Temperature gauges are to be kept securely fastened inside all refrigeration units.
- Mechanical Dishwasher: Low Temp (chlorine) = Ok. Ensure all food contact surfaces (tongs, spatulas) are being washed and disinfected after use or on a timely manner. All items are to be stored in a sanitary manner in order to prevent post contamination. (Stored upside down - clean items are to be kept stored above soiled articles.)
- Wiping cloth storage: Ok.
- Food Storage: Storage shelves are to be kept clean and organized. Ice bin protection in front drive thru service area discussed. Egg storage discussed. (ie: Refrigeration/less than 2 hours at room temperature)ored
- Sanitary Facilities: Ok.
