Observation: 1) Mango puree was stored in opened can.
2) Scoops were stored inside ingredient containers.
Corrective Action(s): 1) Once canned foods are opened, contents must be transferred to a food grade container to prevent potential contamination of foods. Puree was transferred into a food grade container at the time of inspection.
2) Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Cardboard was lining the shelving unit in the walk-in cooler.
Corrective Action(s): Discontinue the practice of using cardboard to line surfaces. All surfaces must be smooth, non-absorbent, and easily cleanable.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Bleach sanitizer pail was unlabelled.
Corrective Action(s): Ensure all chemicals are properly labelled to identify their contents to prevent accidental mixing and/or misuse of chemicals. Containers will need to be relabelled as needed.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Front display cooler had an oven thermometer to verify temperature (minimum 50C).
Corrective Action(s): Ensure accurate cold holding thermometers are placed in refrigerator units to verify cold holding temperatures.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Sweet display cooler was being defrosted at the time of inspection.
-Freezer units ranged from -11C to -18C.
-Samosas were cooked to greater than 74C.
-Hot cook foods cooled in large containers in the walk-in cooler. Sauces made the previous day were at 4C.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer was at 100ppm.
-General sanitation good at the time of inspection.
-A few rodent droppings observed in the facility. Did not observe any pest activity in the monitoring stations. Clean and sanitize areas affected with rodent droppings and monitor for continued pest activity.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until May 21, 2024.
