Observation: Wood shelving and racks (2) and wood counter top in dry storage room.
Wood shelf for hot water tank and for mop holder in mop sink room.
Some wood is stained over time.
Walls in dry storage have chipped drywall or holes from pins and overuse.
Corrective Action(s): Seal all wood with stain or paint that is not toxic to food storage areas.
Repair and patch walls.

Observation: 1. Dishwasher is leaking from the bottom. Some additional condensation building up in gauges that may cause malfunction and confuse readings for monitoring temperatures.
2. Ice machine has small dots of mold.
Corrective Action(s): 1. Fix dishwasher.
Wipe up spills immediately to prevent staff slips and falls.
Put a mat in place temporarily to prevent slips and falls.
2. Remove ice from machine and spray/wipe down surfaces to clean up mold. Clean and sanitize the entire inside at least 1x per month or as needed. Add this part to your cleaning plan.

o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation
o Staff washrooms appear clean and are fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o No hot holding items. Items are cook-serve

Food Processing and Food Protection
o Cooking - Temperatures are being monitored with probe thermometers
o Approved Food Source - Operator keeps receipts of food ingredients from an approved source. Baked items are sourced from Cafe in Vancouver, BC.
o Food Storage - Food is stored in covered containers.
-Reminder to put bacon on the lowest shelf in case of leaks and contamination.

Maintenance and Sanitation
o Dishwasher - Final rinse temperature is >71C at the plate surface, Measured at 71.9C
