Observation (CORRECTED DURING INSPECTION): At the time of inspection bleach sanitizer in spray bottle concentration well over 200ppm.
Corrective Action(s): Dilute 1 oz of regular unscented bleach to 1 gallon of water. This is as per your sanitation plan. Use the 100ppm bleach sanitizer solution to sanitize all food contact surfaces and equipment.

Observation (CORRECTED DURING INSPECTION): At the time of inspection no liquid soap available for use at the back 2 compartment sink.
Corrective Action(s): Ensure the back 2 compartment sink is provided with liquid soap and single use paper towels at all times. Proper and frequent hand washing will prevent the spread of pathogens and/or their toxins that can make people sick.

Observation: Food debris accumulations observed inside the upright Danby cooler next to the sliding glass door cooler.
Corrective Action(s): Thoroughly clean and sanitize the interior of the upright Danby cooler. Correct by March 16, 2020.

Dishwasher registers 73 degrees C at the plate surface during the final rinse cycle.
Front designated hand sink provided with liquid soap and paper towels.
100ppm bleach sanitizer solution available for use in container in front area. After correction 100ppm bleach available for use in back food preparation area.
Sliding glass door cooler at 4 degrees C.
Upright Danby cooler at 1 degrees C.
Hot holding of soup at or above 60 degrees C.
Preparation cooler lower section and inserts at or below 4 degrees C.
Both freezers at or below -18 degrees C.
Beverage cooler at 3 degrees C.
Display cooler not in use. Reminder to turn it on and ensure 4 degrees C or less before placing any cold potentially hazardous foods.
