Observation:
Observation #1: Food debris was observed in shelving units throughout the entire food premise, especially in coolers/freezers.
Observation #2: Slight grease build-up on ventilation hood
Observation #3: Old tinfoil on shelving unit in the back (where spices are stored).

Corrective Action #1: Clean the above-mentioned areas. Conduct a walk-through to clean all shelving units.

Observation: Excess items are being stored on the floor underneath the pizza grill. All items should be stored 6" off the ground to allow for easy cleaning and prevent pest harborage.

General Comments
Low-temperature dishwasher achieved 50 ppm chlorine at the plate level upon final rinse cycle *Note: Required an extensive prime to be able to do so. Operator has test strips and was directed to use these test strips to check the concentration at the dishwasher throughout the day to ensure that the dishwasher continues to function as it should for sanitizing (>/= 50 ppm chlorine).
All coolers operating at </= 4C; Freezers at </= -18C; Hot-holding at >/= 60C
Handsinks equipped with hot and cold running water, liquid soap and paper towel
No signs of pests observed.
Foods stored 6" off the ground, with proteins separated from ready-to-eat foods
Quats in spray bottle at > 200 ppm
Good personal hygiene noted by food handler: clean uniform, hair net, washes hands regularly
