Observation: The ice machine scoop is broken. The scoop is stored in the ice. The ice machine sliding cover over the ice is broken and is left in the open position. It does not slide easily and becomes dislodged from it's tracks and falls into the ice.
Corrective Action(s): Obtain another ice scoop and store it in a container (that can be washed/sanitized) next to, or on top of the ice machine. Repair/ replace the sliding cover so that it can be kept closed to prevent contamination of the ice

Comments

General sanitation is good. Refrigeration measures < 4 C., with the exception of the front drink display cooler which presently contains non-PHF's. The temperatures in this cooler fluctuate widely from negative to positive and the cooler cannot be relied upon to store PHF's safely. This cooler is scheduled for service. Freezer temperatures measure < -18 C. Spray sanitizer measures 300 ppm Q.
