- Manual Dishwashing: 4 Step Method. Sign posted. Ensure all food contact surfaces are being washed and disinfected after use.
-> Wiping cloth storage: Limit the number of cloths/cloth buckets being utilized. Cloths are to be kept completely submerged in the sanitizer at all times.
- Food Storage: Upright refrigeration units: reminder to keep smaller items stored on upper shelves in order to prevent air circulation!
- Chemical storage: Ok.
- Sanitary Facilities: Acceptable.
