308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Dishwasher is not working. Maximum temperature reach inside at the rack level is too low 148, 100, 120F (must be 160F or above). The dial on top of the dishwasher shows that the wash water temperature was at 100F, well below the specification for the machine. For the rinse water, the dial showed 165-170F, also below the specification of the machine. Corrective Action(s): Service the dishwasher. Temperatures must be adequate and the dials must be accurate.Wash dishwashes manually in the mean time. Violation Score: 9
