Observation: Inside of ice machine has noticeable built-up brown residue (mold). The ice machine has not been touched since the initial inspection due to the facility not having events/bookings.
Corrective Action(s): Remove all ice and clean and sanitize the inside of the ice machine. Ensure the ice machine is cleaned and sanitized frequently to avoid mold/grime growth.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): 2 white cutting boards (1 large in size and 1 small in size) had noticeable cracks and chips on them. This makes the cutting boards difficult to clean and sanitize. The manager was notified and he voluntarily disposed of the cutting boards.
Corrective Action(s): Replace the old cutting boards with new boards that are easily cleanable. Ensure utensils and equipment are replaced as needed.

Comments

The facility is currently closed and no food preparation was taking place. Their next booking is scheduled in a weeks time.

-The kitchen and bars have not been used since opening inspection, due to the facility being closed.
-Walk-in cooler was at 0C. There is no food stored inside.
-Walk-in freezer was at -18C. Food storage is satisfactory.
-Dry storage is satisfactory
-QUATs sanitizer in spray bottle achieves 200ppm
-Hand wash stations (including the 2 bar sinks) are fully stocked with liquid soap, paper towels, and hot/cold running water.
-Dishwasher has been shut off since closing. It was not able to be tested at this time.
-Bar area is maintained in a sanitary manner
-No signs of pest activity
