Observation:
1) Found cracked, plastic measuring cups being used. Bacteria can remain in the cracks and pieces of plastic could fall into food.
2) The walls in the food preparation areas are premanently stained with food and there are dents & chipping paint. The walls are not sealed and cleanable, this makes it difficult to clean and it will attract pests.
Corrective Action(s):
1) Discard any cracked, chipped or damaged utensil, lid or food container. Inspect all dishware, cookware, and containers on a regular basis for damage.

2) Repair and resurface all walls so that they are durable, smooth, level, sealed, and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers were 4C; freezers were -15C; hot holding was 35C (but foods only held for 1 hour and then discarded); and thermometers present.
- Bleach sanitizer in spray bottles had [Cl2] of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- 3-compartment sink method used for dishwashing. Soap and bleach present.
- Foods stored in food grade containers; covered; labeled; stored in groups; and 6" off the floor on shelves or platforms. Raw chicken wings are thawed in walk-in-cooler away from RTE foods.
- Wings are fully cooked in the oven, cooled, and stored in fridge until ordered. Wings are reheated in oven and sauce added.
- General sanitation level is satisfactory. All surfaces are cleaned every night with soap and bleach. No build up of food debris observed.
- Back door was open, but screen door present to exclude flies. No signs of pests found.
- FoodSafe certified staff present. Temporary FS cert. from successful completion of refresher course present.
- No expired foods in use or for sale.
