Observation (CORRECTED DURING INSPECTION): Operator has 2 packages of cooked frozen kebab, 5 packages of meat bread, and 7 cheese bread. Facility has not received approval to make these food items at Family Bread.
Corrective Action(s): Facility cannot sell unapproved foods at the facility. Food items were removed from the sale area at the time of inspection. Continued sale of unapproved foods from the facility will result in a violation ticket.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Bleach was too strong and resulted in the test strip bleaching out.
Corrective Action(s): Bleach must be maintained at 100ppm to 200ppm. Concentrations in excess of 200ppm may be toxic for human health. To prepare 100ppm to 200ppm bleach, add 1/2 teaspoon bleach to 1 litre of water. Bleach was prepared at 200ppm at the time of inspection.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Floors in the butcher area had carpet mats.
Corrective Action(s): Surfaces must be smooth, non-absorbent, and easily cleanable. Remove carpets and replace with a more suitable material.

Observation: Cutting board was found to have mould growth.
Corrective Action(s): Replace cutting board and ensure all equipment can be properly cleaned and sanitized on a regular basis.

Comments

Walk-in cooler was at 3C.
-Meat display coolers were at 1C and 4C.
-Butcher upright cooler was at 4C.
-Customer display cooler was at 4C.
-Customer area upright coolers were at 4C.
-Butcher freezer was at -16C.
-Customer area upright freezers ranged from -10C to -18C.
-Chest freezers were at -18C.
-Facility is selling cooked chicken to order. Thermometer used to verify proper cooking temperatures. No chicken was being cooked at the time of inspection.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach and sink plugs available.
-Meat cutting surfaces sanitized every 2 hours.
-Meat saw and grinder sanitized every 2 hours and disassembled for thorough cleaning after each use..
-Foods stored off the ground and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE level 1 valid until August 30, 2025.
