Follow up inspection for ECAO-ANPTWC (June 26, 2017):
Issues addressed:
No pooling and storage of raw eggs observed. Staff informed that they no longer employ this practice. Uncracked raw eggs observed to be stored in walk in cooler
Wiping towels observed to be stored in 2 buckets in cooking line and 1 bucket in waitress station. All sanitizer buckets achieved 100 ppm chlorine.
Hot holding unit had covers at time of inspection
Both pest control device observed to not be in operation and unplugged
No personal cups were observed in food prep area
Utensils such as rice scoops observed to be stored in ice water (replenish ice as it melts)
Cleaning conducted in kitchen shelves, microwave and waitress station counters
Cardboard, tin foil and newspapers lining shelves have been removed
Sealing by dishwasher has been conducted
Mop water is now dumped in mop sink as per operator
No foods observed to be stored on the floor at time of inspection
Outstanding issues:
Raw fish observed to be stored above vegetables - Do not store raw foods above ready to eat foods and vegetables
Cleaning still required underneath kitchen shelves and around water heater
Temperature and sanitizer logs only up to July 9th. Ensure temperature and sanitizer logs are up to date.
