Observation: - Bait box present in kitchen. Label present indicating device contains poison. Rodenticide/poison is not suitable for use inside food premises.

Comments

- Overall sanitation was satisfactory. Minor amount of grime noted on edge of floor near back door. Ensure this area is cleaned.
- Kitchen and bar handsinks were supplied with hot and cold running water, liquid soap and paper towel.
- Dishwasher was operational and dispensed an adequate level of chlorine to sanitize dishes. 100ppm chlorine detected on dish surface. *See note below re: test strips
- Ecolab sink and surface sanitizer present and in use. Available from dispenser at 3 compartment sink and in spray bottles throughout premises. Test strips present. Concentration is within required range per test strips (700ppm DDBSA 1825ppm lactic acid).

- Raw chicken and raw eggs were stored beneath ready to eat foods and produce in walk in cooler. Foods were wrapped/covered.
- Raw chicken prep/battering area (prep cooler) is separate from cooked items.
- Dry goods were stored on shelving off of the floor.
- Ice machine appears clean and maintained. Ice scoop stored in a sanitary manner.
- Pest control service in place - arranged through building owner. No signs of pest activity were noted at time of the inspection. Operator reported there was some rodent activity noted approx. a month ago. Continue to monitor for any further activity (ie. rodent droppings) and ensure any affected areas are cleaned to remove droppings and sanitized. Maintain a high level of sanitation and address (cover, seal) any entrance points if identified. Screen door was in place at back entrance to kitchen to prevent pest entrance.

Action required:
- Obtain chlorine test strips and check dishwasher chlorine level at least daily.
