Observation (CORRECTED DURING INSPECTION): Metal trays used to hold raw bloody meat are washed and rinse with hot soapy water and air dried.
Corrective Action(s): All dishware, equipment and food contact surfaces must be sanitized after use.

1. Walls around grinder in walk in cooler - meat splatter
2. Around edges of scale in hall
3. Meat debris on outside of meat grinder
4. Oil dripping down unused commercial ventilation hood along rim and back panels
Corrective Action(s): Ensure all areas above are cleaned regularly
-Commercial ventilation even when not used must be maintained in sanitary condition to prevent attracting pests. Unit must be professionally cleaned.

Observation: 1. Back wall of walk in cooler has 2 holes and is peeling off wall.
2. Clear top chest freezer lid is cracked - held together with tape
3. Gaps noted around plumbing pipes going into wall under staff room 3 comp sink.
Corrective Action(s): Ensure all surfaces in facility are smooth, durable, non-absorbent, easy to clean and maintained in good condition. All surfaces must also prevent pest entry.
-Seal all holes and gaps, repair damaged materials (peeling wall, cracked lid)
