304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings continue to be observed in the premises. Reviewed Pest Control Operators (PCO) report and recommendations for continued presence (2x/month) until population under control. Overall clean up of facility has occurred and active rodent activity and movements can be better traced.
Corrective Action(s): Continue to prioritize mouse population control, entry and movement control by blocking key access points in bar area, kitchen at washer dryer and dough mixing station, at walk-in freezer and basement as discussed. Operator to also target exit doors to reduce easy access for mice.
Continue to improve daily cleaning to reduce food sources as part of typical Integrated Pest Management Techniques as per PCO advice.
Ensure PCO is present in facility at necessary frequency as a key tool to keep rodent population substantially in check and away from food prep environments.
Review at next scheduled inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Significant cleaning has occurred in premises. More is needed in the following areas:
A- Dishpit as discussed. Under and around stainless steel surround and under-counter extending to walls and floor. Biomat remains, although to a much smaller degree.
B- Deep fryer station much improved, but accumulations of food debris and grease noted on floor between fryers and on the sides of the fryers themselves (may require scraping to remove such accumulations).
C- Beverage cooler walk-in floor the same. Discussed with staff and operator. Plan to thoroughly clean floor and area, then refinish to allow proper and easier routine clean up.
D- Ceiling tile including the HVAC exhaust air exchangers much cleaner.
E- Gap to the left of the walk-in freezer door observed with food and non-food related debris. Discussed.
Corrective Action(s): Continue to make improvements to the observations:
A- Continue to explore means to improve cleaning to this area. Discuss alternate cleaning products with chemical supply company to facilitate easier and more complete end-of-day cleaning.
**Seal all seams/joints at stainless steel surround at dishwash station to reduce water infiltration along wall to behind and below this station.
B- General cleaning needed. Add procedure to revised sanitation plan.
C- Send pictures of completed work.
D- Ceiling tiles to be replaced. Send pictures of completed work.
E- Send picture of completed work.
Review above at next scheduled inspection.

Comments

Significant cleaning has taken place to premises. Discussion with operator highlighted improved system of checks and balances to keep facility clean and safe. Sanitation plan in process of being updated with the implementation of checklists. Food Safety Plan also to be updated with more temperature checks and critical equipment checks.

Operator plans to replace existing wood surfaces, now difficult to clean, with stainless steel targeting the bar area as priority. Long-term plan. Review status at next scheduled inspection.
Operator plans to replace flooring in certain areas of extended kitchen. Review at next scheduled inspection.
