A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -20C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 77.1C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins stored below and separate from RTE foods; and foods stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No accumulation of grease on hot water tank or on wall behind the stock pots. The exhaust canopy is clean, and scheduled to be professionally cleaned in January 2020.
- No signs of pests. The back door was closed during the inspection.
- FoodSafe certified staff present.
- Bean sprouts are stored in a food container at room temperature, in cold water. They are used and/or discarded every 2 hours. New bean sprouts and cold water are replenished in the food container.
- All in order.
