Observation (CORRECTED DURING INSPECTION): Quats sanitizer bucket in front was 50 ppm and sanitizer buckets in kitchen were empty. Ensure sanitizer is changed more frequently to maintain 200 ppm concentration necessary to sanitize food contact surfaces. Solution was changed during inspection and measured 200 ppm. Note: change out wiping cloths more frequently.

Observation: Premise requires thorough cleaning. Food debris and grime accumulation obscured behind equipment (especially prepline, pizza oven) and along walls and corners. Clean affected areas and maintain cleaning/sanitation schedule.
