Observation: 1. Grease and food debris observed on the blade of the deli slicer.
2. Biofilm observed on the metal divider inside the ice machine.
Corrective Action(s): 1. Operator cleaned and sanitized the deli slicer during the inspection. Educate staffs to clean and sanitize the deli slicer properly, especially the hard to reach areas. Corrected during inspection.
2. Clean and sanitize the inside of the ice machine. Discard the current batch of ice and the first batch after sanitizing the interior. Follow your sanitation plan for regular cleaning schedule. Correct by: Immediately

Observation (CORRECTED DURING INSPECTION): Food surface sanitizer not available for use inside the kitchen area. Operator stated cutting boards and utensils were sanitized by the dishwasher.
Corrective Action(s): 200 ppm quats sanitizer was prepared in a labelled spray bottle. Food sanitizer must be available during operation inside spray bottles or in pail to ensure food contact surfaces that unable to fit the dishwasher (e.g deli slicer) can be properly sanitized.

Observation (CORRECTED DURING INSPECTION): A bottle of chemical labelled "vinegar cleaner" was found at the bar area. Staff stated the chemical was used to clean the bar area in conjunction with the quats sanitizer but did not know the actual content inside the bottle.
Corrective Action(s): Do not use the unknow chemical to clean and sanitize the bar area. Quats sanitizer is sufficient to sanitize food contact surface.

Observation: Two lights inside the kitchen were missing light covers. This is a repeated violation.
Corrective Action(s): Install light covers on aforementioned lights. This prevents potential physical contamination of food by chipped light bulbs. Correct by: Nov 26, 2019.

- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quats available at the bar area and from the dispenser.
- Glasswasher dispensed 12.5 ppm iodine at the plate level.
- Low temperature dishwasher dispensed 100 ppm bleach sanitizer at the plate level.
- Food products stored off the ground and organized.
- Food stored inside the walk-in cooler was covered.
- No pest activities observed at the time of inspection.
