Observation (CORRECTED DURING INSPECTION): The following products were inside the prep cooler at the following temperatures:
1) Onion gravy sauce (approximately 4L) at 12C
2) Gravy / curry sauce (approximately 4L) at 12C
3) Kofta (fried balls made with cauliflower + cabbage + paneer) at 12C
4) Processed green peas at 12C
5) Dairy cream at 16C
6) Chopped onions and green peppers at 12C
Corrective Action(s): Aforementioned items were discarded at time of inspection. These items are potentially hazardous foods and may lead to the growth of bacteria or production of their toxins if left out at greater than 4C.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 1. Can opener downstairs in poor sanitary condition, with caked-in grime.
2. Dough presser machine upstairs was used, but was not cleaned afterwards.
Corrective Action(s): 1. Can opener was washed, rinsed, and sanitized in 3-compartment sink at time of inspection. Keep your can opener clean at all times - this is a food contact surface too.
2. Clean-in-place the dough presser upstairs. Disassemble the unit, clean, and spray down with your bleach sanitizer. Allow to air-dry before reassembling.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Bags of frozen salmon have torn inside the chest freezer located upstairs.
2. Ceiling upstairs, which lacks a T-bar, has accumulated grime.
Corrective Action(s): 1. Obtain food-grade freezer bags or equivalent food-grade container and place salmon inside these containers. Do not leave any food products exposed in the freezer. (Date to be corrected by: December 2, 2019)
2. Thoroughly clean the ceiling upstairs to ensure that food is protected from debris and grime. Operator has agreed to install a T-bar by January (2 months' time). Follow-up inspection will occur to ensure that this is done.

Observation: Prep cooler at 12C.
Corrective Action(s): Adjust or repair prep cooler so that it maintains 4C or less, continuously. Do not use this prep cooler until a follow-up inspection has been conducted.

Routine inspection conducted. The following observations were noted at time of inspection:

1. Temperatures (downstairs)
- Walk-in closet cooler at 2C
- Dessert sweet cooler at 4C
- Stand-up freezer at -14C
- Beverage and milk coolers at 4C or below
- Pizza hot-holder at 65C (minimum: 60C)
- Pizza prep cooler at 2C (top) and 2C (bottom). NOTE: Please ensure that all toppings are covered when not in use
- Temperature logs maintained and up-to-date

Temperatures (upstairs)
- Walk-in cooler at 3C
- Prep cooler at 12C (see violation code above)

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach spray bottle present at 200 ppm chlorine residual
- 3-compartment sink set-up for cleaning and sanitizing. 3rd compartment stocked with solution containing 100 ppm chlorine residual

3. Storage
- Storage practices satisfactory
- Chemicals stored separately from food products
- Food-grade containers used for storage of dry products both downstairs and upstairs
- Wooden shelving upstairs is in significantly improved sanitary condition and is generally well maintained. Areas behind equipment and freezers, areas behind cook line are in improved sanitary condition compared to previous routine inspection

4. Pest Control
- Professional pest control company conducts routine audits. Last audit conducted on November 21, 2019. NOTE: Some traps were not reset since the previous visit by the pest control company on November 5, 2019. Please ensure that all traps are reset as required when the technician arrives
- Evidence of pest activity has significantly decreased compared to previous inspections - level of sanitation has generally improved
