Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] (Prep cooler lid left open at all times during inspection. Use sporadic. EHO closed the lid at one point of inspection, then came back in the kitchen to find it left open again. Product temperatures are entering the double digits due to improper use of this machine)

Comments

Discussed yesterday's inspection report with manager on site.
Opened tins have been removed from walk in cooler. Most products found with lids or food grade plastic wrap. Bowls/ scoops have been removed
Dishwasher has been repaired - sanitizer in bottle was too old. Keep it in a cold and dark place to slow down oxidation of chlorine sanitizer.
It is critical staff are knowledgeable and held accountable for their responsibilities while manager is off site. This means monitoring equipment and food safety, while knowing what to do if something is wrong.
Knives have been removed from top shelf and put in a wooden block knife holder - replace this with a magnetic strip which can be attached to the wall. This system is much easier to clean.
Please be advised improper use of gloves and/or improper hand sanitation can result in a $230 violation ticket.
Front coolers must be adjusted.
