Observation (CORRECTED DURING INSPECTION): 1. Two trays of frozen fish was thawing at the mop sink area. 2. Ice scoop was stored inside the ice machine with handle in direct contact with the ice.
Corrective Action(s): 1. Move the frozen fish to the prep sink or the walk-in cooler for thawing. DO NOT store food near the mop sink.
2. Store ice scoop away from the ice and in a sanitary food-grade container / holder.

Observation (CORRECTED DURING INSPECTION): Two trays of frozen fish thawing near the mop sink under room temperature.
Corrective Action(s): Frozen food item must be thawed following proper thawing techniques such as: under cold running water, inside a funcional cooler or defrost using the microwave.

Routine inspection:
- Walk-in cooler at 4C.
- Walk-in freezer at -19C.
- No hot holding unit was used at the time of inspection.
- Hand washing station provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quaternary ammonium sanitizer available from the dispenser.
- 200 ppm chlorine sanitizer available in bucket with wiping clothes stored inside.
- Food items stored off the ground and organized.
- General sanitation satisfactory.
- No pest activities observed at the time of inspection. Pest control operator contracted and pest control reports were available for review.
