Observation (CORRECTED DURING INSPECTION): Food container lids for dry storage product had a build-up of dirt, grease, and food debris. Ensure lids are frequently washed and sanitized.
Wiping rags were stored directly on food preparation table. Ensure wiping rags are stored in a sanitizing solution of 100ppm chlorine (bleach). A bleach solution was prepared at the time of inspection.

Comments

Routine inspection conducted and the following were noted.
Front prep-cooler at 4C.
Standup sliding cooler unit in back of the kitchen at 4C.
Chest freezer at -18C.
Internal temperature of hot foods in the steam table were at least 60C.
Low temperature chlorine dishwasher achieved a final rinse temperature of at least 50ppm. Chlorine test paper available. Ensure to dishwasher is tested daily with chlorine test paper.
Yogurt obtained from an approved supplier.
No pest noted.
Hand washing station satisfactory.
