Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -16C.
-Prep cooler was at 3C. Top inserts were not being used at the time of inspection.
-Cafeteria line cooler are used to store low and non-potentially hazardous foods during the lunch rush.
-Upright freezer was at -11C.
-Hot holding was greater than 60C. Foods were cooked to greater then 74C prior to hot holding.
-Temperatures are checked and recorded daily.
-High temperature dishwasher had a final rinse of 75C on the dish surface during the final rinse (minimum of 71C required for proper sanitizing). Ensure dishwasher rinse temperatures are accurately recorded to verify the dishwasher is functioning properly (recorded temperatures ranged from 19 to 65)
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Students observing practicing good hand hygiene practices at the time of inspection.
-Quats sanitizing solution was tested at 200ppm.
-Slicer cleaned and sanitized at the time of inspection. Slicer properly disassembled for cleaning and sanitizing.
-Ice machine was found to be clean and sanitary.
-General sanitation good at the time of inspection.
-Pest issues have improved significantly since the previous inspection. Continue to monitor for pest activity and contact pest control services as needed.
-FOODSAFE Level 1 valid until January 30, 2028.
