Observation (CORRECTED DURING INSPECTION): Cooked rice, banana leaf wrapped rice with fillings, cooked specialty items and cooked tofu wraps with meat fillings are displayed and stored at room temperature.
Tofu wraps with fillings are 25-35C.
Banana leaf wraps are 19C.
Corrective Action(s): Operator moved these to the back cooler during the inspection.
Ensure these are either kept hot above 60C or cold, below 4C.

Observation: No sanitizier available at the front.
Both spray bottles tested at 0ppm chlorine (labelled 100ppm bleach solution).
No bleach available at the back for dishwashing.
Corrective Action(s): Ensure sanitizer is available during meat cutting and serving deli meats.
Ensure extra bleach available at 2 comp sink for sanitizing dishes and utensils.

Observation (CORRECTED DURING INSPECTION): Tofu wraps, lechee drink with dates, coconut drink, multi-color/flavored sticky rice, stuffed meat buns and other items are in coolers or stored at room temperature with no labels, not from approved sources.
Corrective Action(s): Ensure all prepared foods for immediate consumption are from approved sources.
Home sales and home prep is not allowed.
All items must be properly labelled with ingredients and source.
Operator moved these to the back during the inspection.

o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o Hot holding food items are at 60C on far side closest to glass

Food Processing and Food Protection
o Food Storage - Food is stored in covered containers.
-Raw meats are stored separately by species. Raw fish is in a separate fridge.
-Coolers have been upgraded to upright display freezers and coolers, thank you, very nice job. Keep up the great work.
-Coolers are organized to prevent cross contamination

Maintenance and Sanitation
o 2 compartment dishwashing - reduce clutter here and make more space to work.
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
o Pest control - there are no signs of pests at the time of inspection.
