- Bleach water available for sanitizing at 200ppm chlorine. Ensure that a bucket of bleach solution is kept in kitchen at all times.
- Walk-in fridge is 4C or colder.
- freezers are -18C except for the upright stainless steel freezer (-16C)
- Dishwasher final rinse reached 73C at the plate.
- Liquid soap and paper towel at sink.
- No rodent activity noted.
- Ensure that the back door to the kitchen is kept closed to prevent pest activity.
