Observation (CORRECTED DURING INSPECTION): 1. Cleaver stored in crevice between prep table lid and cutting board. Appears to have been used for vegetables.

- Do not store knives in crevices. If necessary, install a knife rack/holder for knife storage
2. Onions delivered directly onto floor and leaning onto sewage pipe of dishwasher
**Corrected duringin inspection** onions stored off the ground and away from sewage pipe.
- Monitor and ensure food is not stored directly on floor.

Observation: 1. **REPEAT** Build up of debris observed throughout facility.
- Along corners of wals
- Under, beside and behind large appliances, cooking lines
- Along shelving railing/rack
- Walk-in cooler door, door handles, walls and shelving
2. **REPEAT** Heavy build up of grease observe on rahge nood, range hood filters, and air vents above kitchen cooking and prep area
Corrective Action(s): Clean and sanitize above identified areas. Create and maintain a cleaning checklist to ensure all areas are adequately cleaned, and so staff know what still needs to be cleaned.
