Observation (CORRECTED DURING INSPECTION): Noted draining rack shelf relocated above drain board. Noted spout for drainage installed where water can drip onto clean equipment on the drain board below. Discussed concern with operator. Operator suggested installing a hose to drain the water into the sink. Note: This extra drain rack is used occasionally.
Corrective Action(s): Obtain hose and install to drain water from drain rack shelf into the sink.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): One hand sink in back kitchen had cold water turned off and the other had the paper towel dispenser relocated away too far.
Corrective Action(s): Ensure hand wash stations are fully equipped with soap, paper towel in a dispenser/holder, cold and hot running water that is all readily available at the hand basin.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Front entrance to back kitchen has been closed off the install shelving unit and put prep table along the wall. No concerns regarding food safety but operator has not made a formal application to the fire department. Telephone consult was done with fire chief P.Talkkari on site. Applicant is to make a formal floor plan application to the building department/plan checker by the end of this week. No immediate concern at this time as there is second exit to the kitchen.
Corrective Action(s): Applicant to submit floor plans for the changes for formal approval from all departments from the City of Burnaby.

Comments

All coolers 4C or less (walk in cooler, prep cooler unit, cold holding wells with ice...etc); 2 door freezer -21C; Hot holding of gravy 68C
Inserts of food on ice beside cookline were fully submerged in ice. Inserts are turned over well within 2 hours.
Good general sanitation. No obvious sign of pest activity noted at time of inspection.
Ice machine appeared clean with scoop for ice secured to the side of the ice machine.
Quat sanitizer at source, in the back kitchen and at the bar area 200ppm.
High temperature dish washer achieved 71C (with thermolabel).
All stored foods appeared protected (ie. stored off the ground, covered..etc).
** Operator has installed extra shelving along wall that has been installed over front entrance where reusable bowls will be stored. Access to prep sink is a bit tight between work table but is still usable. Discussed options for putting the work table in front of the wall on wheel for when prep sink requires more access. Single use condition will be removed from the health permit once the building department has confirmed that closure of the entrance is acceptable.
