Comments

- Food premises and equipment maintained in sanitary condition
- All handsinks (3) were supplied with liquid soap and paper towel
- Hot and cold running water was available
- Coolers (in use) were operating at 4C or colder:
- Walk-in cooler 1C
- Grab n' go 3 door cooler 4C
- Sliding door beverage cooler 4C
Note: Line cooler and "Aquafina" single door reach in cooler not in use
- Walk-in freezer -19C
- Cooler and freezer temperatures are checked and recorded twice daily. Records were up to date.
- No hot holding occurring at time of the inspection.
- Foods in the walk-in cooler were stored in a manner prevent contamination - wrapped/covered, raw eggs stored beneath ready to eat items.
- Dry storage room was organized with all food items on shelving
- High temperature dishwasher met required final rinse temperature. Temperature at dish surface measured 73.3C.
- Dishwasher wash and rinse temperatures are checked daily using external gauges; however, reading was missed for today. Ensure dishwasher temperature is checked prior to use to ensure it is operating at required temperature. Recommend obtaining min/max thermometer or thermolabels so that required temperature at dish surface can be verified.
- Quats sanitizer available from dispenser at 3 compartment sink and in spray bottles for sanitizing food contact surfaces. Concentration measured 200ppm
- No signs of pest activity noted at the time of the inspection. Pest control service provided by Terminex monthly. Multi-catch traps in use for monitoring/trapping purposes.
- Foodsafe requirement met at the time of the inspection. Chef Operator present and has valid Foodsafe level 1 certificate (valid until April 2024)
