**Make sure staff use soap and paper towels every time they wash their hands!

Temperature records on site and available for review - please measure and record your prep cooler and walk in cooler 2x daily, and include (minimum) daily readings of your dishwasher sanitizer.
Bleach sanitizer rag bucket found depleted of chlorine - changed at time of inspection
Dishwasher initial run measured approx. 10ppm chlorine. Subsequent runs purged the line of the old sanitizer product, and eventually reached 50ppm
**Ask your dishwasher technician to show you how to prime the lines for when this occurs again. Priming the line is also important if the sanitizer bucket runs dry, leaving air in the tube.
General sanitation needs work - please see above note
A small amount of rodent droppings were observed in the back dry storage area. Please address this when you do your deep clean - remember to wipe up droppings while wet with a bleach/ water mix.
Ventilation hood due for servicing this week.
