Observation (CORRECTED DURING INSPECTION): Equipment/utensils/food contact surfaces not properly washed and sanitized. Sanitize levels measured in third compartment sink, sanitizer bucket and spray bottle to be 50 ppm quats. Sanitizer was replaced until 200 ppm Quats was measured. Frequently replace Quats in sanitizer bucket, spray bottle, and in the third compartment sink and ensure sanitizer is at adequate concentration using test strips.
