Routine inspection: Hand sink provided with liquid soap and paper towels. 2 compartment sink available for use. Additional 2 and 3 compartment sink onsite but not installed. These sinks will be for future use. Reminder: when in operation to wash, rinse, sanitize in 100ppm bleach solution for 2 minutes then air dry all knives, pots, spatulas, measuring cups, etc. Preparation table for candy making is smooth, non absorbant and easy to clean. Forming and cutting is done by hand at this time. Large automation equipment to be removed from premise. Storage of finished products adequate. Dry storage of ingredients adequate.
