Comments

Small tools and equipment that are in direct contact with food should be washed in the stainless steel sinks in the equipment washing area rather than in the plastic sinks that are in the janitorial area. Provide washing and sanitizing chemicals in the equipment washing area.
Pest control service is provided every two weeks. Mice activities has been reported. Add monitoring and treatment of stored product pest (e.g., flour moths) to your pest control program.
Handwashing stations are satisfactory.
General sanitation is satisfactory.
Some ponding of water noted on the floor by the rack washing area. Provide adequate drainage. Damaged floor in front of the bucket washer needs repair.
Metal detector on the muffin line was tested during the inspection.
