Observation (CORRECTED DURING INSPECTION): Found eggs sitting out on counter for 1.5 hours.
Corrective Action(s): Must keep eggs below 4 C at all times, keep in the cooler and pull out eggs as needed.

Observation (CORRECTED DURING INSPECTION): Only hand sink was full of pans and inserts.
Corrective Action(s): Hand sinks must be easily accessible at all times. Dirty dishes should be taken directly to the back and not kept up front.

Observation (CORRECTED DURING INSPECTION): Watched staff members return to front to handle food with out washing hands before putting on gloves.
Corrective Action(s): Remind all staff hand must be washed before putting on gloves and when returning to work from break or the store.

Comments

- all coolers were 4 C or colder
- Freezer was - 16 C
- Hot holding was 60 C or hotter
- Thermometers were present
- Spray bottle had 200 ppm quat
- Dishwasher had a final rinse of 50 ppm chlorine
- General sanitation is satisfactory, a little more attention is require in hard to reach areas around stove/oven.
- No signs of pest activity noted during inspection
