Routine inspection conducted today - operator was not working at the time of inspection.
Operates part-time out of Core Kitchen (once a week - approximately 60 hours/ month).
No changes have been made to the existing menu. Sous Vide products are not currently being offered on the menu.
One shelf rented in the walk-in cooler (shelf# 20). No items were being stored in the walk-in cooler at the time of inspection. Operator purchase what is needed when orders are received on work day.
1 shelf rented in the upright freezer. Items in the upright freezer were frozen solid.
Operator knows to refill sanitizer spray bottle and to use the sanitizer at the start and during food preparation.
2 large pest proof containers were in-use to store dry goods and dry foods - excellent. Containers and food contact items appear sanitary.
Operator has access to own probe thermometers.
Reviewed record keeping for coolers and cooling process - excellent.
