Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Sanitizing bucket for wiping rgs measured at 0pppm chlorine. Rags used to wipe surfaces must be kept in clean and sanitary condition so that cross-contamination between food and food contact surfaces does not occur.
Correction: Store rags in 100-200ppm chlorine solution and change out solution regularly to maintain effectiveness of sanitizer.

A second follow-up was completed:
- The designated handwashing sink handle has been securely attached to the faucet. Running hot and cold water can be easily turned on and off.
- All wiping cloths are stored in a bleach and water solution when not in use. The [Cl2] was 200ppm. The bleach and water solution must be changed every 2-4 hours with a fresh solution. Add 1 capful (bleach bottle cap) or 1 Tbsp of bleach to 4 Litres of water.
- All violations have been corrected.
