Observation (CORRECTED DURING INSPECTION): Spray bottle containing RTU sanitizer - 0 ppm quats detected/ 0ppm chlorine detected. Wiping cloths are not being sanitized throughout the day. Wooden table used for making baked goods is not being sanitized (is washed and rinsed only).
Corrective Action(s): Verify contents of the bottle labelled RTU sanitizer. Use the quats sanitizer that is being dispensed automatically at 200ppm to sanitize food contact surfaces and wiping cloths. You can also use a chlorine sanitizer (1 tsp chlorine bleach in 1 litre of water).
Wash, rinse, sanitize, and air dry all food contact surfaces. Provide information on how you are cleaning and sanitizing the wooden table.

Observation: Large 2 door freezer (in walk in cooler) is keeping food at - 4 C. There is a large build up of frost inside this freezer.
Corrective Action(s): Maintain freezer. Frozen food should be at - 18 C/ 0 F.

Observation: General cleaning and organizing is good. The pipes above the kitchen require cleaning (dust is accumulating). The wooden shelves at the end of the wooden prep table are not sealed.
Corrective Action(s): Seal wooden surfaces (wooden shelves) or resurface/replace so that surfaces are impervious to moisture and can be easily cleaned. Clean the pipes above the kitchen area. Add this to your written cleaning schedule.

Food Safe Level 1 certification - Line staff advises he has a recent (<5 yr old) Food Safe certificate - good.
Reminder to check Food Safe Certificate dates. Certificates expire after 5 years. An on line refresher course can be taken to update Food Safe before certificate expires.
Operator and at least one person per shift if operator is away must have a valid Food Safe certificate.
Keep copies of certificates and written Food Safety Plan (food handling procedures) and Sanitation Plan/cleaning schedule on site.
Coolers (line/prep cooler, small bar cooler and walk in - all are at 4 C or colder - good.
Freezers - chest freezer - good. Upright large 2 door cooler - - 4 C - see above.
No hot holding during inspection.
Sanitizer - see above regarding wiping cloths and spray bottle contents. Quats sanitizer is available (200ppm detected).
Hand washing sink has liquid soap. Paper towel dispenser is empty but paper towels are available in dispenser on the wall by the double sink - use paper towels to dry hands.
Dishwasher has a final sanitizing rinse (82 C on gauge and 71 C measured inside of the machine) - good. Maintain equipment as per manufacturer's specifications.
*** Provide an update on status of additional sink. This is a busy kitchen with several staff and food preparation from raw (cooking chicken, washing produce etc.).
Previously discussed with operator the need for an additional sink so that there is a hand sink + food prep sink + double sink + commercial dishwasher + mop sink.
Concrete floor - when re-surfacing, ensure that the finished surface is impervious to moisture.
