Routine inspection conducted today:
Handwash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at ≤ 4C.
All freezer units were at ≤ -18C.
Organization in the refrigeration/ freezer units were excellent - proper storage hierarchy, all food stored protected and at least 6 inches off the floor.
Hot hold unit was noted > 60C.
100 PPM chlorine residual detected on the plate level after the rinse cycle on the low temperature dish machine.
QUAT sanitizer spray bottles noted in the kitchen and server areas. 200 PPM QUAT detected in all the spray bottles.
All chemical bottles have proper name label and stored away from food.
General organization and cleanliness excellent.
General Manager (on-site at the time of inspection) has her FOODSAFE level 1 equivalent - expires May 22, 2024.

Note: Slight grease buildup noted on the fume hood above the deep fryer. Due for professional cleaning on June 30, 2022. Clean any visible grease buildup in the meantime to avoid potential contamination of food or possible fire hazard before professional cleaning is conducted.
Note: A few flies noted below the dish machine and below the 2-compartment sink. Orkin comes in monthly (last came in on May 10, 2022) for inspection. Continue to work with your pest control company to address the flies issue. No other pest activities noted during the inspection.
